  • Butternut Squash
  • Fresh Spinach
  • Ricotta Cheese
  • Mozzarella Cheese
  • Parmesan Cheese
  • Eggs

  • Olive Oil
  • Nutmeg
  • Salt

Instructions

  1. Prepare the Butternut Squash: Peel, seed, and cube it. Cook in salted boiling water until tender, about 10-15 minutes. Drain and set aside.
  2. Sauté the Spinach & Garlic: Heat olive oil in a skillet, add minced garlic, and cook until fragrant. Add spinach and cook until wilted.
  3. Make the Ricotta Mixture: Combine ricotta cheese, egg, nutmeg, salt, and pepper in a mixing bowl and mix until well combined.
  4. Layer the Lasagna: In a baking dish, layer butternut squash, ricotta mixture, sautéed spinach, and mozzarella, then repeat layers, finishing with mozzarella and Parmesan on top.
  5. Bake to Perfection: Cover with foil and bake at 375°F (190°C) for 30 minutes, then remove foil and bake an additional 15-20 minutes.
  6. Let it Rest: Allow lasagna to rest for 10-15 minutes before slicing.

Notes

This lasagna tastes even better the next day and can be made ahead of time. Great for leftovers and easy to freeze.
