  • 1 medium butternut squash
  • 4 slices of bacon
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • ¾ cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash by slicing it in half lengthwise and scooping out the seeds.
  3. Roast the squash on a baking sheet, cut side up, drizzled with olive oil, salt, and pepper for 35-40 minutes.
  4. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  5. Sauté the spinach in the same skillet for 2-3 minutes until wilted, then mix in garlic powder.
  6. Mix the filling by combining the spinach, chopped bacon, ricotta cheese, half of the mozzarella, and seasoning in a large bowl.
  7. Stuff each roasted half of the squash with the filling mixture.
  8. Top with remaining mozzarella cheese.
  9. Final bake for an additional 15-20 minutes until the cheese is bubbling.
  10. Serve warm and enjoy!
