- 2 cups grated zucchini
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ¾ cup cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup vegetable oil
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan.
- Grate the zucchini and squeeze out excess moisture.
- Mix the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
- Whisk together the eggs, sugar, and vanilla extract, then add the vegetable oil.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the grated zucchini and chocolate chips.
- Pour the batter into the prepared baking pan.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
You can dust the cake with powdered sugar or top it with cream cheese frosting. The cake freezes well, making it perfect for preparing in advance.
