Description

Delightful nectarines come together in these scrumptious muffins, perfect for breakfast or a snack.


Ingredients

  • Fresh Nectarines (2-3 medium)
  • All-Purpose Flour (2 cups)
  • Granulated Sugar (¾ cup)
  • Baking Powder (1 tablespoon)
  • Salt (½ teaspoon)
  • Egg (1 large)
  • Milk (1 cup)
  • Butter, melted (½ cup)
  • Vanilla Extract (1 teaspoon)
  • Cinnamon (1 teaspoon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your muffin pan by lining it with paper liners or greasing it lightly.
  3. Chop the nectarines into small pieces and set them aside.
  4. Mix dry ingredients in a bowl: flour, sugar, baking powder, salt, and cinnamon.
  5. Combine wet ingredients in another bowl: egg, milk, melted butter, and vanilla extract.
  6. Combine the wet and dry mixtures, stirring gently until just mixed.
  7. Fold in the chopped nectarines evenly throughout the batter.
  8. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
