Ingredients

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp pumpkin pie spice
  • ½ cup melted butter
  • 2 large eggs
  • 1 cup pumpkin puree
  • Cream cheese frosting
  • Orange and black sprinkles (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pan by lining it with Halloween-themed cupcake liners.
  3. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Combine the wet ingredients in another bowl: melted butter, eggs, and pumpkin puree.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Fill each cupcake liner about ¾ full with batter.
  7. Bake for 18-20 minutes, until a toothpick comes out clean.
  8. Decorate the cooled cupcakes with cream cheese frosting and sprinkles.
