Description

A delightful, rustic dessert featuring ripe nectarines wrapped in a buttery, flaky crust, perfect for summer.


Ingredients

  • 45 ripe nectarines
  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 34 tablespoons ice water
  • 1 egg mixed with 1 tablespoon water (for egg wash)

Instructions

  1. Make the dough: In a mixing bowl, whisk together the flour, sugar, and salt. Add the cold cubed butter and, using your fingers or a pastry cutter, work the butter into the flour until you have a mixture that resembles coarse crumbs.
  2. Add ice water: Slowly add the ice water, one tablespoon at a time, stirring until the dough starts to come together.
  3. Chill the dough: Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Prepare the filling: Wash and slice the nectarines into thin wedges. Toss the slices with sugar and set aside.
  5. Preheat the oven: Preheat your oven to 400°F (200°C).
  6. Roll out the dough: On a floured surface, roll the dough out into a circle about 12 inches wide and transfer it to a parchment-lined baking sheet.
  7. Assemble the galette: Spoon the nectarines into the center of the dough, leaving about a 2-inch border. Fold the edges of the dough over the nectarines.
  8. Apply the egg wash: Brush the dough with the egg wash and sprinkle a little sugar on top.
  9. Bake the galette: Bake for about 30-35 minutes, or until the crust is golden brown.
  10. Cool and serve: Let it cool for about 10-15 minutes on a wire rack.
