- 2 cups All-purpose flour
- 1 cup Pumpkin puree
- 1 cup Grated Comté cheese
- 3 large Eggs
- 2 teaspoons Baking powder
- 1 teaspoon Salt
- 1/2 cup Olive oil
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1 teaspoon Black pepper
- 2 tablespoons Chopped fresh herbs (rosemary or sage)
- 1/4 cup Honey or maple syrup
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- Combine the flour, baking powder, salt, and spices in a large mixing bowl.
- Mix the eggs, pumpkin puree, olive oil, and honey/maple syrup in another bowl until combined.
- Add the wet mixture to the dry ingredients, folding gently with a spatula.
- Fold in the grated Comté cheese and chopped herbs.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- Slice and serve warm or at room temperature.
