- 2 cups Fresh Raspberries
- 2 cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1 cup Unsalted Butter, softened
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- Powdered Sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×9-inch square baking dish with butter or parchment paper.
- Make the crust by mixing 1 cup flour, 1/2 cup sugar, and softened butter until crumbly.
- Add the egg and vanilla extract and mix until combined.
- Press 2/3 of the dough into the bottom of the dish.
- Prepare the filling by combining raspberries, 1/2 cup sugar, 2 tablespoons flour, and baking powder in a bowl.
- Spread the raspberry mixture over the crust.
- Crumble the remaining dough over the filling.
- Bake for 35-40 minutes until golden.
- Cool completely before cutting into squares.
