Ingredients

- 2 cups fresh pumpkin or 1 can pumpkin puree
- 1 can black beans or chickpeas
- 1 pound spaghetti or whole wheat/gluten-free pasta
- 1 cup cheddar cheese, grated
- 4 eggs or flax eggs for vegan option
- 1 avocado
- 2 cups kale or other greens
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon nutmeg
- Optional: jalapeños or chili powder for heat
Instructions
- Start with the cauldron: Set out all your ingredients on your countertop.
- Brew up a soup: Sauté chopped onions and garlic in a pot over medium heat.
- Add your greens: Toss in kale and allow to wilt slightly.
- Pour in the pumpkin along with the vegetable broth, then simmer for about 20 minutes.
- Roll small meatballs and add them in the last 10 minutes of cooking.
- Season to taste with salt, pepper, and any additional herbs.
- Serve with style: Ladle into bowls and garnish with sour cream and fresh herbs.
Notes
For a vegetarian twist, use lentil ‘eyeballs’ instead of meatballs. Add cream for a richer, creamy version.
