Ingredients

  • 1 cup Rolled Oats
  • 1/2 cup Almond Flour
  • 1/2 cup Protein Powder
  • 1/4 cup Coconut Sugar
  • 2 tsp Ground Cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 large Egg
  • 1/3 cup Butter (melted)
  • 1 tsp Vanilla Extract
  • 1/2 cup Optional Mix-ins (Chocolate Chips or nuts)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients in a large bowl: rolled oats, almond flour, protein powder, coconut sugar, ground cinnamon, baking soda, and salt.
  3. Blend wet ingredients in another bowl: melted butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until it forms a dough.
  5. Add optional mix-ins if desired.
  6. Scoop the dough onto a lined baking sheet, spacing them about an inch apart.
  7. Bake for about 10-12 minutes or until slightly golden.
  8. Cool cookies on a wire rack.
  9. Assemble your jar by layering cookies and optional oats or cinnamon sugar.
