A delicious twist on classic pecan pie, these Protein Pecan Pie Jars are packed with protein and perfect for individual servings.

- 1 cup toasted pecans
- 1 cup protein powder
- ½ cup maple syrup
- 1 cup coconut milk
- 2 eggs
- 1 tsp vanilla extract
- ½ cup brown sugar
- pinch of salt
- 2 tablespoons crushed graham crackers (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Toast the pecans on a baking sheet for about 8-10 minutes.
- Mix the wet ingredients in a bowl: coconut milk, maple syrup, eggs, and vanilla extract.
- Add the dry ingredients: sift in protein powder, brown sugar, and salt.
- Incorporate the toasted pecans, reserving some for topping.
- Prepare your jars with crushed graham crackers at the bottom, if using.
- Fill each jar with the pecan mixture until about three-quarters full.
- Bake for about 25-30 minutes until slightly jiggly.
- Cool at room temperature, then chill in the fridge for at least an hour.
- Top with reserved pecans before serving.
Notes
These jars can be stored in an airtight container in the fridge for up to 3-4 days. They can also be frozen for up to 3 months.
