Ingredients
- Cottage Cheese (1 cup)
- All-Purpose Flour (2 cups)
- Sugar (1/4 cup)
- Baking Powder (1 tablespoon)
- Salt (1/2 teaspoon)
- Egg (1 large)
- Cinnamon (2 teaspoons)
- Butter (1/4 cup, melted)
- Vanilla Extract (1 teaspoon)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the wet ingredients: In a large mixing bowl, combine the cottage cheese, melted butter, egg, and vanilla extract. Stir until well blended.
- Whisk the dry ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Combine wet and dry ingredients: Gradually pour the dry ingredients into the wet mixture, stirring until just combined.
- Prepare the cinnamon mixture: In a small bowl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon.
- Layer the mixture: Grease a loaf pan, pour half the batter, sprinkle half the cinnamon mixture, and swirl slightly.
- Top with remaining batter and cinnamon mixture.
- Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
- Cool for 10-15 minutes in the pan before transferring to a wire rack.
Notes
For a vegan version, substitute the egg with a flaxseed meal mixture and use coconut oil in place of butter.
