Ingredients

  • Cottage Cheese (1 cup)
  • All-Purpose Flour (2 cups)
  • Sugar (1/4 cup)
  • Baking Powder (1 tablespoon)
  • Salt (1/2 teaspoon)
  • Egg (1 large)
  • Cinnamon (2 teaspoons)
  • Butter (1/4 cup, melted)
  • Vanilla Extract (1 teaspoon)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the wet ingredients: In a large mixing bowl, combine the cottage cheese, melted butter, egg, and vanilla extract. Stir until well blended.
  3. Whisk the dry ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  4. Combine wet and dry ingredients: Gradually pour the dry ingredients into the wet mixture, stirring until just combined.
  5. Prepare the cinnamon mixture: In a small bowl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon.
  6. Layer the mixture: Grease a loaf pan, pour half the batter, sprinkle half the cinnamon mixture, and swirl slightly.
  7. Top with remaining batter and cinnamon mixture.
  8. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.

Notes

For a vegan version, substitute the egg with a flaxseed meal mixture and use coconut oil in place of butter.
