- 1 cup of cottage cheese
- 2 eggs
- 1 cup of applesauce
- 1 cup of all-purpose flour
- 1/2 cup of rolled oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 cup of brown sugar
- 1 medium apple, diced
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Mix in a large bowl the cottage cheese, eggs, applesauce, and vanilla extract.
- Combine dry ingredients in another bowl: flour, oats, baking soda, cinnamon, and brown sugar.
- Fold the dry mixture into the wet ingredients until just combined.
- Add the diced apples and gently fold them in.
- Prepare the muffin tin by lining with paper liners or greasing it.
- Pour the batter into each muffin cup, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool the muffins on a wire rack before serving.
