Description

Delicious muffins loaded with protein, featuring cozy flavors of apple and cinnamon, perfect for breakfast or a snack.


Ingredients

  • 1 cup of cottage cheese
  • 2 eggs
  • 1 cup of applesauce
  • 1 cup of all-purpose flour
  • 1/2 cup of rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 cup of brown sugar
  • 1 medium apple, diced
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large bowl the cottage cheese, eggs, applesauce, and vanilla extract.
  3. Combine dry ingredients in another bowl: flour, oats, baking soda, cinnamon, and brown sugar.
  4. Fold the dry mixture into the wet ingredients until just combined.
  5. Add the diced apples and gently fold them in.
  6. Prepare the muffin tin by lining with paper liners or greasing it.
  7. Pour the batter into each muffin cup, filling them about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins on a wire rack before serving.
  10. Dive in and enjoy!

These muffins can be stored in an airtight container for a few days and freeze well too.
