Ingredients

  • 1 cup pumpkin puree
  • 1 cup cottage cheese
  • 2 eggs
  • 1/3 cup honey or maple syrup
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the pumpkin puree, cottage cheese, eggs, and honey/maple syrup in a large mixing bowl.
  3. Mix the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  4. Combine the dry ingredients into the wet mixture gently.
  5. Add the nuts if using, folding them in carefully.
  6. Scoop the batter into muffin cups, filling each about three-quarters full.
  7. Bake for about 20-25 minutes until a toothpick comes out clean.
  8. Cool for 5 minutes in the tin before transferring to a wire rack.
