Delightfully moist scones packed with protein from cottage cheese, sweetened with maple syrup and enhanced with crunchy pecans.


Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/4 cup maple syrup
  • 1 cup cottage cheese
  • 1/2 cup chopped pecans
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1/4 cup cold butter, cut into small pieces

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the flour, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Incorporate the cottage cheese, maple syrup, egg, and vanilla extract in a separate bowl.
  5. Combine the wet ingredients with the dry ingredients until just mixed.
  6. Add the chopped pecans and fold gently.
  7. Shape the dough into a circle about 1 inch thick and cut into 8 wedges.
  8. Bake for 15-20 minutes or until lightly golden.
  9. Cool on a wire rack before serving.
