Ingredients

  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil (melted)
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9×5-inch loaf pan with coconut oil or parchment paper.
  3. Blend the cottage cheese, Greek yogurt, honey (or maple syrup), and melted coconut oil in a large mixing bowl until smooth.
  4. Add the eggs and blend until just combined.
  5. Combine the flour, baking powder, baking soda, salt, and lemon zest in another bowl.
  6. Mix the dry ingredients into the wet ingredients, folding gently. Add the lemon juice.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
