Ingredients

  • 1 cup cottage cheese
  • 1/2 cup orange juice
  • Zest of 1 orange
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  3. Mix the cottage cheese, orange juice, orange zest, honey (or maple syrup), and eggs in a large mixing bowl until smooth.
  4. Combine the flour, baking powder, baking soda, salt, and cinnamon (if using) in a separate bowl.
  5. Fork the dry ingredients into the wet mixture until just combined, then gently fold in the cranberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy!
