- 1 cup cottage cheese
- 1/2 cup orange juice
- Zest of 1 orange
- 1/3 cup honey or maple syrup
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen cranberries
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- Mix the cottage cheese, orange juice, orange zest, honey (or maple syrup), and eggs in a large mixing bowl until smooth.
- Combine the flour, baking powder, baking soda, salt, and cinnamon (if using) in a separate bowl.
- Fork the dry ingredients into the wet mixture until just combined, then gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy!
Notes
For added flavor, serve with Greek yogurt on top or as a beautiful gift. Store leftovers for up to 3 days at room temperature or freeze individual slices.
