- 1 cup cottage cheese
- 1/2 cup peanut butter (or nut butter of choice)
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 cup whole wheat flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the muffin tin—grease or line it with muffin liners.
- Blend the cottage cheese, peanut butter, honey, eggs, and vanilla extract until creamy.
- Mix the whole wheat flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
- Combine the wet mixture into the dry ingredients; gently fold until just combined.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
