Ingredients

  • 1/2 cup peanut butter (or nut butter of choice)
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin—grease or line it with muffin liners.
  3. Blend the cottage cheese, peanut butter, honey, eggs, and vanilla extract until creamy.
  4. Mix the whole wheat flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
  5. Combine the wet mixture into the dry ingredients; gently fold until just combined.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
