Ingredients

- 1 cup cottage cheese
- 1/2 cup almond butter (or your favorite nut butter)
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Blend the cottage cheese and almond butter in a blender until smooth.
- Mix in brown sugar, honey (or maple syrup), and eggs until well combined.
- Combine rolled oats, baking powder, and vanilla in a separate bowl.
- Pour the dry mixture into the wet mixture and fold gently with a spatula.
- Add the chocolate chips, if using, and fold in.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until edges pull away from sides and a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack to cool completely before cutting.
Notes
Serve warm with vanilla ice cream or Greek yogurt. These blondies can be frozen for up to 3 months.
