A delightful twist on classic blondies made with protein-packed cottage cheese for a healthier treat.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup almond butter (or your favorite nut butter)
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Blend the cottage cheese and almond butter in a blender until smooth.
  3. Mix in brown sugar, honey (or maple syrup), and eggs until well combined.
  4. Combine rolled oats, baking powder, and vanilla in a separate bowl.
  5. Pour the dry mixture into the wet mixture and fold gently with a spatula.
  6. Add the chocolate chips, if using, and fold in.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes or until edges pull away from sides and a toothpick comes out clean.
  9. Cool for 10 minutes before transferring to a wire rack to cool completely before cutting.

Notes

Serve warm with vanilla ice cream or Greek yogurt. These blondies can be frozen for up to 3 months.
