  • Juice of 2 limes
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prep Your Vegetables: Gather and dice the bell peppers, jalapeño, red onion, and avocado.
  2. Rinse the Beans and Corn: Drain and rinse the black beans and corn under cold water.
  3. Mix the Base: In a large mixing bowl, combine the black beans, corn, diced peppers, jalapeño, and onion.
  4. Add the Good Stuff: Squeeze in lime juice and drizzle with olive oil; mix gently.
  5. Integrate the Avocado and Cilantro: Fold in diced avocado and chopped cilantro carefully.
  6. Taste and Adjust: Adjust lime juice, salt, and pepper to your taste.
  7. Let It Chill: Refrigerate for at least 30 minutes to let flavors meld.
