Ingredients

  • 1 cup fresh raspberries
  • 1 lemon, zested and juiced
  • 3 tablespoons sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • Optional: graham cracker crumbs for garnish

Instructions

  1. Prep Your Ingredients: Rinse raspberries under cold water, pat dry, and set aside a few for decoration. Zest and juice the lemon.
  2. Whip the Cream: Whip heavy cream in a bowl until soft peaks form.
  3. Mix the Lemon Base: Combine lemon juice, lemon zest, sugar, and vanilla in another bowl, stirring until sugar is dissolved.
  4. Combine the Mixtures: Gently fold the lemon mixture into the whipped cream.
  5. Add the Raspberries: Gently fold in the raspberries, breaking some up slightly.
  6. Chill: Spoon into serving bowls and refrigerate for at least 2 hours.
  7. Serve and Garnish: Optionally sprinkle with graham cracker crumbs and add reserved raspberries before serving.
