- 4 ripe Nectarines, diced
- 1 small Red Onion, finely chopped
- 1/4 cup Cilantro, chopped
- 1 Jalapeño, seeded and minced
- Juice of 1 Lime
- 1/4 teaspoon Salt, or to taste
- Black Pepper, freshly ground, to taste
Instructions
- Chop the Nectarines, wash them well, halve, pit, and dice them into small cubes.
- Prepare the Red Onion by peeling and chopping it finely.
- Mince the Jalapeño, removing seeds for a milder flavor.
- Chop the Cilantro and remove any thick stems.
- Mix all ingredients in a large bowl and toss gently.
- Taste and adjust flavors as desired.
- Chill in the refrigerator for at least 30 minutes before serving.

Feel free to customize with additional ingredients like mango, avocado, or smoked paprika.
