Description

A delightful bread infused with juicy nectarines, perfect for breakfast, snacks, or dessert.


Ingredients

  • 3 ripe nectarines, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash, pit, and chop your nectarines into small pieces.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each, then mix in the vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  7. Fold in the chopped nectarines and walnuts (if using).
  8. Grease a 9×5-inch loaf pan and pour in the batter, spreading it evenly.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

This bread can be served plain, with cinnamon sugar, or butter. Also freezes well for up to three months.
