Description
A delightful French dessert featuring a rustic, flaky pastry filled with juicy nectarines and blueberries, perfect for summer gatherings.
Ingredients
Scale
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- ½ cup unsalted butter (cold, cubed)
- 4–6 tablespoons ice water
- 2–3 ripe nectarines (sliced)
- 1 cup fresh blueberries
- ¼ cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
Instructions
- Prepare the crust: In a large mixing bowl, combine the flour, salt, and sugar. Whisk them together to incorporate air. Now, add the cold, cubed butter. Using a pastry cutter (or your fingertips), work the butter into the flour until it resembles coarse crumbs.
- Add the ice water: Gradually stir in the ice water, one tablespoon at a time, just until the dough starts to come together. Form it into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C) while the dough chills.
- Make the filling: In a bowl, toss your sliced nectarines and blueberries with brown sugar, cornstarch, vanilla extract, and a pinch of salt. Allow it to sit to let the flavors meld.
- Roll out the dough: On a lightly floured surface, roll out your chilled dough into a rough circle about 12 inches in diameter.
- Assemble the galette: Transfer the rolled-out dough onto a parchment-lined baking sheet. Spoon the fruit filling onto the center, leaving at least a 2-inch border. Fold the edges of the dough over the filling, pleating it as you go.
- Apply the egg wash: Beat an egg and brush it over the exposed dough.
- Bake: Pop your galette into the preheated oven and bake for about 35-40 minutes, or until the crust is golden and the filling is bubbling.
- Cool and serve: Let your galette cool on the baking sheet for about 10 minutes before transferring it to a wire rack.
Notes
