Instructions

  1. Prepare the crust: In a large mixing bowl, combine the flour, salt, and sugar. Whisk them together to incorporate air. Now, add the cold, cubed butter. Using a pastry cutter (or your fingertips), work the butter into the flour until it resembles coarse crumbs.
  2. Add the ice water: Gradually stir in the ice water, one tablespoon at a time, just until the dough starts to come together. Form it into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) while the dough chills.
  4. Make the filling: In a bowl, toss your sliced nectarines and blueberries with brown sugar, cornstarch, vanilla extract, and a pinch of salt. Allow it to sit to let the flavors meld.
  5. Roll out the dough: On a lightly floured surface, roll out your chilled dough into a rough circle about 12 inches in diameter.
  6. Assemble the galette: Transfer the rolled-out dough onto a parchment-lined baking sheet. Spoon the fruit filling onto the center, leaving at least a 2-inch border. Fold the edges of the dough over the filling, pleating it as you go.
  7. Apply the egg wash: Beat an egg and brush it over the exposed dough.
