Instructions

  1. Prepare the Dough: In a large mixing bowl, whisk together the all-purpose flour and powdered sugar. Add the cubed, chilled butter. Use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
  2. Bring it Together: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Wrap it in plastic wrap and refrigerate for about 30 minutes.
  3. Make the Filling: While the dough chills, prepare the fruit filling. Toss together the sliced nectarines, blueberries, granulated sugar, cornstarch, and ground cinnamon. Let sit for about 10 minutes.
  4. Preheat Your Oven: Preheat your oven to 400°F (200°C).
  5. Roll Out the Dough: Lightly flour your surface and roll out the chilled dough into a circle about 12 inches in diameter. Transfer it to a parchment-lined baking sheet.
  6. Add the Filling: Spoon the fruit mixture into the center of the dough, leaving about a 2-inch border around the edges.
  7. Fold the Edges: Carefully fold the edges of the dough over the filling, pleating it as you go.
  8. Egg Wash and Sugar Sprinkle: Beat an egg with a bit of water, brush it over the crust, and sprinkle a little granulated sugar on top.
  9. Bake to Perfection: Bake for about 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
