- Puff pastry
- 1 cup cottage cheese
- 2 medium apples, peeled and chopped
- 1/4 cup sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 egg beaten with 1 tbsp water (for egg wash)
- Pinch of salt
Instructions
- Prepare your work surface: Lightly flour a countertop or cutting board.
- Roll out the puff pastry to about a 1/8-inch thickness.
- Make the filling by combining cottage cheese, apples, sugar, cinnamon, vanilla, and salt.
- Cut the pastry into 4-5 inch squares.
- Fill each square with a tablespoon of filling.
- Seal the turnovers by folding over and crimping the edges with a fork.
- Brush the tops with egg wash for a golden finish.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes.
- Cool on a wire rack before serving.

Serve warm with honey or maple syrup, or pair with a scoop of vanilla ice cream.
