- 1/2 cup unsalted butter, cold and cubed
- 2/3 cup buttermilk
- 1 cup fresh or frozen huckleberries
- 1 teaspoon vanilla extract
- 1 egg (optional, for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Stir in the huckleberries gently without smashing them.
- Add wet ingredients: In a separate bowl, mix buttermilk and vanilla, then pour into dry ingredients and fold until just combined.
- Form the dough into a 1-inch thick disk on a floured surface.
- Cut the disk into 8 equal wedges or use a biscuit cutter.
- Prepare for baking by placing scones on the baking sheet and optionally brushing the tops with beaten egg.
- Bake for 15-20 minutes, or until lightly golden.
- Cool on a wire rack before serving.
