Description
A healthy and delicious protein-packed dessert made with fresh peaches and a crumbly topping, perfect for any time of day.
Ingredients
- Fresh Peaches (4-5 large or 6-8 medium)
- Protein Powder (1 scoop)
- Oats (1 cup)
- Flour (1/2 cup)
- Brown Sugar (1/3 cup)
- Cinnamon (1 tsp)
- Butter (1/4 cup or coconut oil for dairy-free)
- Vanilla Extract (1 tsp)
- Almond Milk (1/2 cup or any milk of your choice)
Instructions
- Prepare the Peaches: Wash, peel (if preferred), and slice the peaches. Place them in a medium bowl, and sprinkle them with a tablespoon of brown sugar and a dash of cinnamon. Let them sit for about 15 minutes.
- Make the Cobbler Batter: In another bowl, combine the oats, flour, protein powder, remaining brown sugar, cinnamon, and salt. In a separate bowl, whisk together the melted butter (or coconut oil), vanilla extract, and almond milk until well combined. Gradually stir the wet mixture into the dry ingredients.
- Layering the Jars: Grab your favorite mason jars. Start with a layer of prepared peaches followed by a layer of cobbler batter. Repeat until jars are filled three-quarters of the way.
- Bake to Perfection: Preheat your oven to 350°F (175°C). Bake for about 25-30 minutes, or until the top is golden brown and the peaches are bubbly.
- Cool and Serve: Allow the jars to cool for about 10-15 minutes. Serve warm or at room temperature, topped with Greek yogurt or ice cream.
Notes
These jars can be made gluten-free by using gluten-free rolled oats and almond flour. They can be stored in the fridge for up to 3 days.
