- 1 cup cottage cheese
- 2 large eggs
- ½ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 ½ cups whole wheat flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1 ½ cups fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 12-cup muffin tin by lining it with paper liners or spraying it with non-stick cooking spray.
- Mix the cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a large mixing bowl until smooth.
- Combine the whole wheat flour, baking powder, baking soda, salt, and cinnamon (if using) in a separate bowl.
- Add the dry mixture to the wet mixture gradually, stirring gently until just combined.
- Fold in the blueberries gently.
- Scoop the batter into the muffin cups, filling each about ¾ full.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool the muffins for about 5 minutes in the tin, then transfer to a wire rack to cool completely.
