Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with festive cupcake liners.
  3. Mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  4. Combine the eggs, vegetable oil, milk, and vanilla extract in a separate bowl.
  5. Create the batter by gradually pouring the wet mixture into the dry mixture and whisk until well combined.
  6. Stir in the boiling water slowly.
  7. Fill each liner about two-thirds full with batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
