Description

A vibrant mix of black beans, corn, and fresh vegetables in a zesty dressing, perfect as a dip or a salad.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can sweet corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Prep the Veggies: Start by washing your fresh produce. It’s essential to have clean veggies! Drain and rinse the black beans and corn.
  2. Chop and Dice: Dice the bell peppers, cherry tomatoes, and red onion into uniform pieces.
  3. Combine Everything: In a large mixing bowl, toss together the black beans, corn, cherry tomatoes, red bell pepper, green bell pepper, red onion, and cilantro.
  4. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
  5. Mix it All Together: Pour the dressing over the vegetable mixture and gently stir until everything is coated.
  6. Taste and Adjust: Give it a taste and adjust seasoning if necessary.
  7. Chill and Marinate: Cover the bowl and let it chill in the fridge for at least 30 minutes.
