- 1 can of black beans, rinsed and drained
- 1 can of sweet corn, rinsed and drained
- 1 cup of cherry tomatoes, halved or diced
- 1 small red onion, finely diced
- 1 bell pepper, diced
- 1 jalapeño pepper, seeds removed and diced (optional)
- 1/2 cup of fresh cilantro, chopped
- Juice of 2 limes, freshly squeezed
- 1/4 cup of extra virgin olive oil
- Salt and pepper, to taste
Instructions
- Prep your ingredients: Gather and prepare all the ingredients as instructed.
- Mix the veggies: In a large mixing bowl, combine the black beans, sweet corn, cherry tomatoes, diced red onion, bell pepper, and jalapeño.
- Add fresh herbs: Toss in the chopped cilantro and stir gently to combine.
- Make the dressing: Whisk together the lime juice, olive oil, salt, and pepper in a separate bowl.
- Combine and marinate: Pour the dressing over the veggie mix and fold gently. Let it rest in the fridge for at least 30 minutes.
- Taste and adjust: Sample the dip and adjust seasonings as desired.
- Serve: Enjoy the Cowboy Caviar with tortilla chips or as a side with your favorite dishes.

Best when allowed to marinate. Can be made ahead of time; hold off on adding avocado until serving to prevent browning.
