Description

A vibrant and healthy dip made with black beans, corn, and fresh veggies, perfect for gatherings and celebrations.


Ingredients

  • 1 can of black beans, rinsed and drained
  • 1 can of sweet corn, rinsed and drained
  • 1 cup of cherry tomatoes, halved or diced
  • 1 small red onion, finely diced
  • 1 bell pepper, diced
  • 1 jalapeño pepper, seeds removed and diced (optional)
  • 1/2 cup of fresh cilantro, chopped
  • Juice of 2 limes, freshly squeezed
  • 1/4 cup of extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Gather and prepare all the ingredients as instructed.
  2. Mix the veggies: In a large mixing bowl, combine the black beans, sweet corn, cherry tomatoes, diced red onion, bell pepper, and jalapeño.
  3. Add fresh herbs: Toss in the chopped cilantro and stir gently to combine.
  4. Make the dressing: Whisk together the lime juice, olive oil, salt, and pepper in a separate bowl.
  5. Combine and marinate: Pour the dressing over the veggie mix and fold gently. Let it rest in the fridge for at least 30 minutes.
  6. Taste and adjust: Sample the dip and adjust seasonings as desired.
  7. Serve: Enjoy the Cowboy Caviar with tortilla chips or as a side with your favorite dishes.

Notes

Best when allowed to marinate. Can be made ahead of time; hold off on adding avocado until serving to prevent browning.
