Ingredients

  • 1 cup Corn, fresh or canned
  • 1 cup Diced Tomatoes, fresh
  • 1/2 cup Red Onion, finely chopped
  • 1 cup Bell Peppers, finely diced
  • 1 ripe Avocado, diced
  • 1/4 cup Fresh Cilantro, chopped
  • Juice of 1 Lime
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients by gathering and rinsing them if needed.
  2. Chop and dice your tomatoes, bell peppers, and onions into small pieces.
  3. Combine the drained black beans and corn in a large mixing bowl.
  4. Add the chopped tomatoes, bell peppers, and onions to the bowl.
  5. Fold the diced avocado gently into the mix.
  6. Pour in the freshly chopped cilantro and squeeze in the lime juice.
  7. Drizzle the olive oil over the dip and season with salt and pepper.
  8. Rest the dip in the fridge for at least 30 minutes before serving.
  9. Serve in a beautiful bowl with tortilla chips or veggie sticks.
