Ingredients

  • 1 scoop protein powder
  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 1 egg (or 1 flax egg)
  • 1/2 cup maple syrup or honey
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 cup walnuts or pecans (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease the jars with cooking spray or coconut oil.
  3. Mix dry ingredients: rolled oats, protein powder, cinnamon, nutmeg, and baking powder in a bowl.
  4. Add the grated carrots, Greek yogurt, egg (or flax egg), and maple syrup or honey.
  5. Incorporate nuts and dried fruit if using, and fold gently to combine.
  6. Layer the mixture into prepared jars, filling them two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool for at least 10 minutes before serving.

Notes
