Ingredients

- 1 cup all-purpose flour
- 1 cup cottage cheese (preferably low-fat)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 2 large eggs
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the flour, cocoa powder, sugar, baking soda, baking powder, and salt in a large bowl.
- Blend the cottage cheese, vegetable oil, eggs, vanilla extract, and red food coloring in another bowl.
- Combine the wet mixture into the dry ingredients and fold together gently.
- Fill each muffin cup about two-thirds full with batter.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Cool in the tin for about 5 minutes before transferring to a wire rack.
Notes
For a healthier alternative, you can use whole wheat flour or Greek yogurt. These muffins also freeze well.
