Description

A delightful blend of creamy cheesecake with the health benefits of protein, all packed inside strawberry-flavored bars.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup ground oats
  • 1/4 cup melted coconut oil
  • 2 tablespoons honey or maple syrup (for crust)
  • 1 tablespoon gelatin or agar-agar
  • Fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine ground oats, melted coconut oil, and honey or maple syrup in a mixing bowl.
  3. Press the crust mixture into an 8×8-inch baking pan lined with parchment paper.
  4. Bake the crust for 10-12 minutes until lightly golden.
  5. Blend together cottage cheese, Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
  6. Sprinkle gelatin over cold water, let it bloom, then blend into the filling.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Layer chopped strawberries on top of the filling.
  9. Chill in the refrigerator for at least 4 hours.
  10. Lift the bars out of the pan using the parchment paper, slice, and serve chilled.

Notes

Serve with whipped Greek yogurt or a sprig of mint. These bars can also be stored in an airtight container for a week or frozen for later.
