Ingredients

  • 1 cup cottage cheese
  • 1 cup whole wheat flour
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare your muffin pan with liners or grease.
  2. Mix the cottage cheese, honey (or maple syrup), eggs, applesauce, lemon juice, and vanilla in a bowl.
  3. Combine the whole wheat flour, baking powder, baking soda, poppy seeds, zest, and salt in another bowl.
  4. Mix the dry ingredients into the wet mixture, folding gently.
  5. Scoop the batter into muffin cups, filling them 3/4 full.
  6. Bake for 15-20 minutes until golden, and a toothpick comes out clean.
  7. Cool for 5 minutes in the pan, then transfer to a wire rack.
