Ingredients

- 2 cups Cottage Cheese (low-fat or fat-free)
- 1/2 cup Key Lime Juice (freshly squeezed)
- 1/4 cup Honey or Maple Syrup
- 2 large Eggs
- 1 tsp Vanilla Extract
- 1 ½ cups Graham Cracker Crumbs
- 1/3 cup Melted Coconut Oil
- 1/4 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining graham cracker crumbs, melted coconut oil, and salt in a mixing bowl. Transfer to a greased baking dish and press down firmly.
- Bake the crust for about 8-10 minutes until golden and fragrant.
- Blend the filling ingredients in a food processor until smooth and creamy.
- Pour the key lime mixture over the crust.
- Bake again for 20-25 minutes until the filling is set but still a tad wobbly.
- Cool to room temperature, then refrigerate for at least 2 hours before slicing.
- Slice into squares and serve.
Notes
These bars can be customized with fruit layers, chocolate chips, or nutty additions. They store well in the fridge for a week or can be frozen for up to three months.
