- 1 cup canned pumpkin puree
- 1 ½ cups whole wheat flour

- ½ cup brown sugar
- 2 large eggs
- ½ tsp salt
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with cooking spray or butter.
- Combine the dry ingredients: whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Mix the wet ingredients: in a large mixing bowl, combine cottage cheese, pumpkin puree, brown sugar, and eggs until smooth.
- Combine the dry and wet ingredients gently to avoid overmixing.
- Add optional nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
This bread can be frozen for up to 3 months. Be careful not to overmix the batter to avoid a dense loaf.
