Soft and chewy cookies infused with rich chocolate and cottage cheese, packed with protein for a healthier dessert.


Ingredients

  • 1 cup cottage cheese
  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix cottage cheese and sweetener in a large mixing bowl until smooth.
  3. Add in vanilla extract and salt.
  4. Combine dry ingredients in a separate bowl.
  5. Blend together dry and wet mixtures until a sticky dough forms.
  6. Incorporate dark chocolate chips into the dough.
  7. Scoop dough onto a baking sheet lined with parchment paper.
  8. Bake for 15–18 minutes until edges are set.
  9. Cool on a wire rack for 5 minutes before serving.

Notes
