Ingredients

  • 1 scoop protein powder (vanilla or unflavored)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Zest of 1 lemon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Mix the wet ingredients: In a bowl, combine the cottage cheese, Greek yogurt, applesauce, sugar, and eggs, and blend until creamy.
  3. Prepare dry ingredients: In another bowl, mix the flour, protein powder, baking powder, cinnamon, and lemon zest.
  4. Combine wet and dry mixtures: Gradually add the dry mixture to the wet mixture, stirring gently.
  5. Add in extras: Fold in nuts or chocolate chips if using.
  6. Pour and spread: Pour the batter into the prepared pan and smooth the top.
  7. Bake: Bake for 30-35 minutes until golden and a toothpick comes out clean.
  8. Cool it down: Let the cake cool for 10-15 minutes before transferring to a wire rack.
