A delightful and healthy twist on classic cinnamon rolls, packed with protein from cottage cheese.
Ingredients

- 2 cups All-purpose flour
- 2 tsp Baking powder
- 1 cup Cottage cheese
- 1 large Egg
- 1/2 cup Brown sugar
- 1 tbsp Cinnamon
- 1/4 cup Unsalted butter, melted
- 1 tsp Vanilla extract
- 1/4 cup Sour cream or Greek yogurt
- Powdered sugar (for icing, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the dry ingredients: combine all-purpose flour, baking powder, and a pinch of salt.
- Combine the wet ingredients in another bowl: mix the cottage cheese, egg, melted butter, vanilla extract, and sour cream or Greek yogurt.
- Combine the mixtures: gradually add the wet mixture to the dry ingredients, mixing gently until a dough forms.
- Knead the dough on a floured surface for about 2 minutes until smooth.
- Roll out the dough into a rectangular shape, roughly 12×9 inches.
- Prepare the filling: mix brown sugar and cinnamon, then sprinkle over the rolled-out dough.
- Roll the dough tightly into a log from one of the longer ends.
- Slice the log into about 12 equal pieces and place in a greased baking dish.
- Bake for 25-30 minutes until golden brown.
- Make the icing by mixing powdered sugar with milk or water to desired consistency.
- Serve the rolls warm, topped with icing.
Notes
Dough can be made ahead of time and chilled for up to 24 hours before baking to enhance flavors.
