Description

A delightful and healthy twist on classic cinnamon rolls, packed with protein from cottage cheese.


Ingredients

  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1 cup Cottage cheese
  • 1 large Egg
  • 1/2 cup Brown sugar
  • 1 tbsp Cinnamon
  • 1/4 cup Unsalted butter, melted
  • 1 tsp Vanilla extract
  • 1/4 cup Sour cream or Greek yogurt
  • Powdered sugar (for icing, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the dry ingredients: combine all-purpose flour, baking powder, and a pinch of salt.
  3. Combine the wet ingredients in another bowl: mix the cottage cheese, egg, melted butter, vanilla extract, and sour cream or Greek yogurt.
  4. Combine the mixtures: gradually add the wet mixture to the dry ingredients, mixing gently until a dough forms.
  5. Knead the dough on a floured surface for about 2 minutes until smooth.
  6. Roll out the dough into a rectangular shape, roughly 12×9 inches.
  7. Prepare the filling: mix brown sugar and cinnamon, then sprinkle over the rolled-out dough.
  8. Roll the dough tightly into a log from one of the longer ends.
  9. Slice the log into about 12 equal pieces and place in a greased baking dish.
  10. Bake for 25-30 minutes until golden brown.
  11. Make the icing by mixing powdered sugar with milk or water to desired consistency.
  12. Serve the rolls warm, topped with icing.

Notes

Dough can be made ahead of time and chilled for up to 24 hours before baking to enhance flavors.
