Delightful protein-packed babka made with cottage cheese and rich chocolate, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon instant yeast
  • 1/3 cup warm milk
  • 1/2 cup smooth cottage cheese
  • 1/4 cup unsalted butter, melted
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Mix your dry ingredients: Combine the flour, sugar, salt, and yeast in a large mixing bowl.
  2. Form the dough: In another bowl, mix warm milk and cottage cheese until smooth, then combine with dry ingredients.
  3. Knead the dough: Turn onto a floured surface and knead for about 5-7 minutes.
  4. Let it rise: Place in a greased bowl, cover, and let rise until doubled in size (about 1 hour).
  5. Prepare the filling: Melt chocolate chips and mix in a spoonful of cottage cheese.
  6. Shape the babka: Roll out dough, spread filling, roll it into a log, and braid.
  7. Second rise: Place braided dough in a greased loaf pan and let rise for another 30 minutes.
  8. Brush and bake: Preheat oven to 350°F (175°C), brush with egg wash, and bake for 30-35 minutes.
  9. Cool and enjoy: Let cool for 10 minutes before transferring to a rack.

Notes

For a vegan version, use plant-based butter, non-dairy milk, and a substitute for the egg wash.
