- 3 ripe bananas
- 1 cup cottage cheese
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until creamy.
- Mix in the cottage cheese and eggs, whisking until well combined.
- Sweeten the mixture with honey or maple syrup and vanilla extract.
- Combine the dry ingredients in a separate bowl and whisk together.
- Merge the dry mixture into the wet mixture, folding gently.
- Pour the batter into a greased 9×5-inch loaf pan.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Serve warm with butter or almond butter, and feel free to add nuts or chocolate chips for variations.
