Description

A nutritious twist on classic banana bread, packed with protein from cottage cheese and ripe bananas.


Ingredients

  • 3 ripe bananas
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until creamy.
  3. Mix in the cottage cheese and eggs, whisking until well combined.
  4. Sweeten the mixture with honey or maple syrup and vanilla extract.
  5. Combine the dry ingredients in a separate bowl and whisk together.
  6. Merge the dry mixture into the wet mixture, folding gently.
  7. Pour the batter into a greased 9×5-inch loaf pan.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes
