Description
A delightful and healthy twist on classic cherry cheesecake packed with protein, perfect for satisfying sweet cravings.
Ingredients
Scale
- 1 cup Greek yogurt
- 1 cup cream cheese (light or full-fat)
- 1/2 cup protein powder (vanilla or unflavored)
- 1/4 cup sweetener of choice (honey, maple syrup, or favorite sugar substitute)
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen dark cherries
- 2 tablespoons maple syrup or honey
- 1 teaspoon lemon juice
- Optional: crushed graham crackers or nuts for layering
Instructions
- Prepare the Cheesecake Layer: In a large mixing bowl, combine Greek yogurt, cream cheese, protein powder, sweetener, and vanilla extract. Blend until smooth and creamy—about 2 minutes.
- Layer the Ingredients: Place a layer of cheesecake mixture at the bottom of serving jars.
- Prepare the Cherry Topping: In a small saucepan, add dark cherries, maple syrup, and lemon juice. Cook for about 5-7 minutes until the cherries break down and become syrupy.
- Assemble: Once the cherry topping has cooled, layer it on top of the cheesecake layer and optionally add crushed graham crackers or nuts.
- Refrigerate: Cover jars and refrigerate for at least one hour to allow flavors to meld.
Notes
Great for grab-and-go snacks or quick desserts. Store in the fridge for up to 4 days without cherry topping.
