  • 1 large butternut squash
  • 46 slices of bacon
  • 1 cup goat cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash by slicing it in half lengthwise and scooping out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Roast the squash halves for about 35-40 minutes until tender.
  4. Cook the bacon in a skillet over medium heat until crispy.
  5. Sauté the onion until soft, then add the minced garlic and cook briefly.
  6. Mix the sautéed mixture with bacon, goat cheese, and parsley in a bowl.
  7. Stuff the roasted squash halves with the mixture.
  8. Final roast for another 10-15 minutes until the cheese is melted and slightly golden.
  9. Serve warm and enjoy!

Notes

You can prepare the stuffed squash in advance and bake it just before serving. Add a sprinkle of fresh parsley or balsamic glaze for extra flavor.
