Description

  • Fresh nectarines (2 cups diced)
  • All-purpose flour (2 cups)
  • Granulated sugar (¾ cup)
  • Baking powder (2 teaspoons)
  • Salt (½ teaspoon)
  • Eggs (2 large)
  • Milk (¾ cup)
  • Unsalted butter (½ cup, melted)
  • Vanilla extract (1 teaspoon)
  • Cinnamon (½ teaspoon)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it.
  3. Mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  4. Combine the eggs, milk, melted butter, and vanilla extract in another bowl.
  5. Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  6. Fold in the diced nectarines.
  7. Fill each muffin cup about ¾ full.
  8. Bake for 18-20 minutes or until golden brown.
  9. Cool in the tin for 5 minutes before transferring to a wire rack.
