Ingredients
- Fresh nectarines (2 cups diced)
- All-purpose flour (2 cups)
- Granulated sugar (¾ cup)
- Baking powder (2 teaspoons)
- Salt (½ teaspoon)
- Eggs (2 large)
- Milk (¾ cup)
- Unsalted butter (½ cup, melted)
- Vanilla extract (1 teaspoon)
- Cinnamon (½ teaspoon)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin by lining it with paper liners or greasing it.
- Mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
- Combine the eggs, milk, melted butter, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
- Fold in the diced nectarines.
- Fill each muffin cup about ¾ full.
- Bake for 18-20 minutes or until golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack.
- Enjoy! Serve warm with butter or honey.
