Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash by slicing off both ends and cutting it in half lengthwise.
  3. Cube the squash into 1-inch pieces for even roasting.
  4. Toss the cubed squash with olive oil, honey, salt, and pepper in a large bowl.
  5. Roast the squash cubes on a parchment-lined baking sheet for 25-30 minutes, flipping halfway.
  6. Toast the walnuts in a dry skillet over medium heat for 5-6 minutes until golden.
  7. Add crumbled feta and toasted walnuts to the roasted squash.
