Instructions

  1. Prep the squash: Peel, halve, seed, and grate the butternut squash to yield about 2 cups.
  2. Mix the ingredients: Combine grated squash, flour, egg, salt, and pepper in a bowl until well incorporated.
  3. Heat the skillet: Heat a medium skillet over medium heat with a tablespoon of oil.
  4. Form and fry the fritters: Shape 2-tablespoon amounts of the mixture into patties and fry until golden brown, about 3-4 minutes per side.
  5. Drain and cool: Transfer cooked fritters to a paper towel-lined plate to absorb excess oil before serving.

Notes
