  • Butternut Squash (about 2 cups, peeled and grated)

  • Eggs (2 large)

  • Garlic (2 cloves, minced)
  • Ground Cumin (1 teaspoon)
  • Salt (½ teaspoon)
  • Pepper (½ teaspoon)
  • Olive Oil (for frying)

Instructions

  1. Prep the butternut squash by peeling, halving, and grating it.
  2. Squeeze out the moisture using a kitchen towel.
  3. Mix together the grated squash, flour, eggs, green onions, garlic, cumin, salt, and pepper in a bowl.
  4. Heat olive oil in a skillet over medium heat.
  5. Form fritters by scooping the batter into the skillet and flattening gently.
  6. Cook until golden brown, about 3-4 minutes on each side.
  7. Drain on paper towels and repeat cooking with the remaining batter.
  8. Serve warm with your favorite dipping sauce or yogurt.
